PENGETAHUAN TENTANG DAPUR

DAPUR definition:

Sebuah tempat dan bagian dari bangunan hotel atau restoran yang kegiatan memasak danmenyediakan makanan dan minuman.

KLASIFIKASI DAPUR

Dapur dapat diklasifikasikan dalam 4 macam sesuai dengan ukuran fungsi dan ruanglingkup pekerjaannya sedangkan klasifikasi dapur adalah sbb:


Conventional KitchenPada umumnya terdapat di perusahaan jasa pelayanan makanan dalam ukuran kecil.Fungsi dan ruang lingkup pekerjaan dapur ini hanya menyiapkan jenis menu tetap (tabledhote) dan menu banquet dalam jumlah kecil.
Semua makanan panas disajikan pada suatu tempat di dapur yang biasa disenut counter.

Combine Preparation and Finishing Kitchen

Dipersiapkan untuk perusahaan jasa pelayanan makanan dalam ukuran menengah. Padaprinsipnya pembagian ruangan dapur merupakan penggabungan antara preparation andfinishing. Dapur tipe ini dibagi dalam 2 blok: hot kitchen (khusus makanan panas) sepertiyang dilakukan oleh vegetable cook, sauce cook dan cold kitchen (khusus makanan dingin)seperti yang dilakukan oleh larder cook, butcher.

Separated Preparation dan Finishing KitchenSistem ini sangat cocok untuk jasa pelayanan makanan skala besar. Pembagian ruangandapur:

Bagian pengolahan makanan dingin (larder)

Bagian pengolahan sayur-sayuran (vegetable)Khusus menyiapkan makanan panas seperti kaldu putih (sapi, ayam, ikan, ataubouillon), sup encer (bouillon dan consommé), sup kental (cream soup, veloute), nationalsoup, special soup, dll.

 Bagian pengolahan sauce (saucier)Khusus memasak makanan yang terbuat dari daging-dagingan (seafood, ayam, babi,kambing) membuat sauce pendamping seperti sauce coklat (demiglace), saus putih (veloute,béchamel), hollandaise/béarnaise sauce, saus tomat, dll.
Bagian kue roti (patisserie)Khusus kue, roti, ice cream, dan dessert.
Convenience KitchenDipakai oleh jasa pelayanan makanan jadi dengan peralatan: freezer/chiller, microwaveoven, convention oven, deep fat fryer, sejumlah stove dengan peralatan masak yang tidak terlalu banyak.

METHOD OF COOKING

Gratinating
Untuk gratinate berarti memasak dengan panas radiasi dari atas.Biasanya dilakukan di salamander, yang dirancang untuk menerima ukuran standar panci. Gratinating juga bisa dilakukan di rak bawah sumber panas.
Boilling
Untuk memasak makanan dalam cairan air atau berpengalaman dan rasa yang menggelegak cepatpada 100c di permukaan laut, tidak peduli seberapa tinggi burner dihidupkan, suhu cairan akan pergitidak lebih tinggi.- Dalam air dingin dengan penutup; Untuk memungkinkan makanan untuk menyerap air danmemasak secara merata dan untuk mencegah ketangguhan dan kekerasan di permukaan eksterior;Rebus: kentang, sayuran kering, dan tulang.- Dalam air dingin tanpa penutup; Memasak pada suhu di bawah titik didih akan mencegahkekeruhan; Jangan merebus: saham jelas, kaldu jelas, jeli daging.- Di dalam air mendidih dengan penutup; memasak makanan lebih cepat dan lebih vitamin mineraldan warna dipertahankan; Rebus: sayuran.- Di dalam air mendidih tanpa penutup; Pati pada eksterior pasta gelatinizes dan menjaga buah darimengikuti satu sama lain; Rebus cepat: pasta dan nasi.- Di dalam air mendidih tanpa penutup; Untuk mengontrol mendidih, pertama memungkinkanmenggelegak untuk menutup pori-pori. Mengurangi suhu dan didihkan perlahan; Rebus di awal:daging pucat dan unggas
